Breakfast pancakes

Serve these rich pancakes on a Sunday, when you really deserve it!

Pancake mix

  • 2 eggs
  • 250 ml fresh milk
  • 1 tbsp rum
  • 1/2 tsp cinnamon
  • 60 g ground almonds
  • 100 g oat flour
  • 125 g spelt flour / wholegrain spelt flour
  • 1 tsp baking powder
  • pinch of salt
  • a bit of water
  • a bit of agave syrup

*You can add 1-2 tbsp of coconut oil, if you like.

**his pancake mixture is approximate, you can add a bit more water or milk and adjust the dry ingredients accordingly. 

The final mixuture should be thick, but liquid.

Serving

Serve the pancakes with some homamade hazelnut spread, jam, agave syrup, fruit, peanut butter or with your favourite apple or mixed berries topping.

Beat the eggs with milk. Gradually stir in the dry ingredients, constantly stiring.

Pour a little bit of water , agave and rum in.

If you like, you can also add a bit of coconut oil for additional flavour, but it is perfectly fine if you skip this step if you are avoding extra fat consumption.

Bake the pancakes on a hot pan drizzled with some coconut oil

Serve with your favourite additions.
