Chocolate & rum bites from my childhood

My sister and I used to love this icy bites as kids. Our neighbour shared the recipes with us and we've been making them regularly ever since.

They are packed with chocolate, cookies and rum, they are full of goodness and flavour.

Our neighbour used to roll them into cristal sugar, but I actually find them tastier rolled in shredded coconut.

You can also roll them into cocoa powder, icing sugar, chocolate, toasted nuts.

I made a few adjustments to the original recipe, so now the bites are vegan and healthier.

All you need to prepare the bites is a food processor.

Ingredients

  • 200 g regular biscuits such as Petit beurre, but I found great vegan ones by Gullon
  • 200 ml almond milk
  • 150 g 70% dark chocolate
  • 100 ml agave syrup*
  • 1 tbsp odourless coconut oil
  • 120 g walnuts
  • rum**

*Adjust the sweetness according to your taste. I find this ratio ideal, but feel free to pour in a bit more if needed.

**Be generous wth the rum.:)

Pour it in gradually, stir the mixture and taste to see how much more do you need to add.

You can roll the bites into icing sugar, cocoa powder, chocolate chunks or crumbs and even toasted nuts, coarsley chopped.

Blend the buscuits and walnuts in a food processor until fine like flour.

Heat the milk shortly, until lukewarm, and pour over the dry ingredients in a separate bowl.

Add the agave syrup and stir.

Melt the chocolate over low heat with a tbsp of coconut oil, then pour over the cookie mixture and stir.

Lastly, pour over the rum, stir and taste. See how much would you like to add and then place the mixture in the fridge for a few hours to set or in the freezer if you want to make the bites faster.

The mixture should be firm enough for you to be able to roll the bites between the palms of your hands.

Depending on the size of the bites you make, you'll get approximately 30 pieces.

Roll the balls into shredded coconut and place in an airtight container and store in the fridge.

You can also store them in the freezer if you don't plan to eat them within the next few days.
