Cool banana nut bites

A great suggestion for some healthy sweet bites to enrich your Christamas table!

Nuts, banana and cocoa powder make real drops of heaven that I've rolled into some amaranth pops and grated dark chocolate.
They are done in no time at all, there is no baking, all you need is a food processor.

  • 130 g mixed nuts (I used almonds and walnuts)
  • 1 medium size banana
  • 1 tsp cocoa powder
  • 2 tsp extra virgin coconut oil
  • 2 dried figs, sliced into small cubes


 

Sprinkle

  • grated dark chocolate and amaranth pops or another kind of sprinkle, it's your choice


Place the nuts in the food processor and blend until they're very fine.
Add the sliced banana, cocoa powder, dried figs and coconut oil.
Blend again. 
You'll probably have to stop a couple of times to scrub the mixture from the walls of the food processor, but that's fine.
When the mixture is wet, thick and kind of smooth, place it in a airtight container.
Put it in the freezer for about half an hour.
Meanwhile, make the sprinkles by combining the amarath pops and the grated chocolate.
Take the mixture out of the feezer, wet your hands and make small balls, roll them into the sprinkle mix and place in a large container or a tray.
When you're done store them again in the freezer until they're hard enough and ready to serve.
