Raw cookies with dried plums, olive oil and almonds

Ingredients
- 120g hazelnuts
- 150g dried plums (if they are not soft, soak them for 10 minutes)
- orange zest
- 50g almonds
- 2 pinches of salt
- 20g cocoa powder
- 1 tbsp olive oil
- 50g dried dates or 1 large tbsp honey
cocoa nibs or shredded coconut for sprinkling
Blend the hazelnuts shortly.
Add the plums and orange zest and blend until the ingredients are well combined.
Add the cocoa powder, olive oil, salt and dates or honey, mix shortly.
You should get a wet and thick texture. Pour a bit of water if needed.
Transfer the mixture in a large bowl, stir in the roughly coarsed almonds.
Make small bites, roll them in coconut or cocoa nibs and flatten the top.
Place them on a tray lined with parchment paper and store in the fridge for 30 minutes before serving.
They will last for a week stored in an air-tight container in the fridge.
