Wholegrain vegan apple walnut rolls with date caramel sauce

Ingredients
- 500g wholewheat flour
- pinch of salt
- 1 pack of action dry yeast
- cca 2dl warm milk of choice
- 2-3 tbsp brown sugar
- lemon zest
- cca 100g baked butternut pure
- 2 tbsp coconut oil
- 100g walnuts
- 1 large apple
- 1 1/2 tsp cinnamon
Slice the butternut, clean it and bake for 20 minutes on 180C degrees, until it softens.
Make a pure out of the baked butternut.
Divide it in two, one part is meant for the recipe and the rest you can use for another recipe.
In a different bowl combine the flour, salt and sugar, adding lastly the pure as well.
Combine the yeast, milk and 1 tbsp of sugar. Be careful not to use hot milk, but slightly warm. Leave it like that for 10 minutes and then pour it into the flour mixture, along with the lemon zest. Knead the dough, cover it and leave it in a warm place for at least 1 hour.
Roll the dough on a floured surface in a rectangle. The tichkness of the dough should be between 3-5 mm. Spread the coconut oil over the dough. Sprinke the spices, walnuts and apple and roll it. Slice 12 rolls. Turn them on the side and place them on a baking tray lined with parchment paper.
Leave them to rise for another 30 minutes.
Bake the rolls on 180 C degrees for 30 minutes, then leave them to cool for 15 minutes.
Spread some warm jam over them or make the date caramel sauce.
Use 20 dates. Clean them and cover them with warm water to soften then make a thick paste using a hand mixer or a blender.
You can add a bit of water from the soaking to ease the process.
You can add some spices to the date caramel to get a stronger flavour.
