Irresistible strawberry jam bars

The reaction to the result was simple...can we have them all? :)

A great choice for breakfast / pre workout snack, an awesome energy bar that you won't be able to keep your hands off.

Base

  • 200 g fine oats
  • 100 g spelt flour
  • 80 g mixed almonds and hazelnuts
  • 1 tsp ceylon cinnamon
  • a pinch of Himalayan salt
  • 50 g coconut palm sugar
  • 75 g ghee butter, room temperature
  • 30 ml cold water
  •  1 egg

Spread

  • strawberry jam (it would be desirable to use homemade jam with no lots of added sugar, keep it natural)*

* I used Naturel strawberry jam.

Crumble

  • 100 g mixed almonds and hazelnuts
  • 50 g spelt flour
  • 1 1/2 - 2 tbsp coconut palm sugar
  • 1/2 tsp cinnamon
  • 25 g ghee butter
  • cca 1 tbsp cold water

Crisp pastry, fruit sweetness of the jam and a nice crumble as a cherry on top of the cake. Great ingredients give a remarkable result!

I developed this recipe last year for the croatian edition of the magazine Sensa, but this time I worked a little bit more on it and created an even better variation of the recipe.

I apologize, but the photos are not new. ;)

 

Before even starting, blend the oats in a food processor almost to flour. Then, do the same with the nuts for the base. For the crumble, keep the nuts coarsely chopped.

For the base, stir all the dry ingredients, beat in one egg and the coconut oil (softened- NOT MELTED). Work the ingredients first with a mixer, add the water and then use your hands to form a dough.

Press the dough on a baking tray lined with parchment paper, 20x20 cm, fork it and leave it 30 minutes to chill in the fridge.

Take it out, bake in a preheated oven on 180 C degrees, 7-8 minutes.

Take it out, spread it with a generous amount of jam, cover the top with the crumble and place it back in the oven for 12-15 minutes.

For the crumble, stir all the dry ingredients, add the softened ghee butter (always stored on room temperature) and use your hands to combine it with the rest of the ingredients. Pour in a tbsp of water to ease the process. The crumble won't be compact, but nicely greased/wet.

Once baked, take it out, leave it to set and cool and the slice. 

Serve as a breakfast, as a coffe treat or pre-workout snack.
