Gnocchi in a spicy veggie sauce

When hunger is in question, your hands and stomach don't ask questions! That's why I bring you a great idea for a fast food lunch!

 

This recipe was created one hungry afternoon when I came back from work starving, gave a quick scan through the kitchen, took some veggies I had by hand and started chopping and slicing.

The only minus in the recipe is that my gnocchi aren't homemade, but next time, I'll repay myself and you for that flaw.

Ingredients for the sauce

  • 1 leek
  • about 10 mushrooms (champignones)
  • 4 large handful of mangel*
  • 2-3 tomatoes/pelati + pelati sauce
  • Himalayan salt
  • black pepper
  • cayenne pepper
  • mozzarella
  • yellow soft salty cheese by your preference
  • oregano

Add parmesane, pognoli etc. by choice.

* I didn't weight the mangel, but took 4 handufuls ballpark, meaning 2 full hands x 2 times.

 

Clean and wash the leek, then chop into small rings. I used the whole white part of it and some of the green.

Do the same with the mushrooms that you'll cut into slices. Take 2-3 pelati tomatoes from a can and chop into small cubes and after you've washed the mangel, chop it into larger stripes.

Cook the leek over medium heat for a minute or two on some olive oil and water.

Add the mushrooms and after a minutes throw in the mangel and stir. Leave it all to soften for a while.

Meanwhile, boil the water for the gnocchi. Salt the water and once it's time throw in the gnocchi and cook until they start coming to the surface. Take them out.

Once the veggies have softened, add the tomatoes and their sauce. Season it all by taste.

Cook them for a few minutes, then add some torn mozzarella and yellow cheese cubes

Stir in the cooked gnocchi..

 

Pay attention to the liquid/tomato sauce you add, so you don't end up with dry gnocchis.

 

Serve with some oregano, parmesane or just plain like that. You'll have a quick lunch ready in 15-20 minutes.
