Sweet and sour combo of this salad will go perfectly will almost every lunch.

For the salad
- 2 beetroots
- 4 middle sized carrots
- a handful of diced goat feta cheese
For the dressing
- 4-5 tbsp extra virgin olive oil
- 1 tbsp mustard
- 1 tsp honey
- 2 tbsp lemon juice
- 1 clove of garlic
- Himalayan salt
Peel, wash and grate the carrots and beetroot.
I grated the beetroot coarsley while the carrot finely, because I prefer it that way.
Dice the feta cheese and throw it into the veggie bowl.
In a different bowl, combine approximately 4-5 tbsp olive oil, honey, mustard, finely diced garlic and lemon juice.
Decide on your own about the ingredient ratio, depending on your taste.
Pour the dressing over the salat and season by choice.
