Cool bites, raw and vegan, flavoured with delicious rum!
I believe that everyone in Croatia knows about the cool bites that we have probably all enjoyed as little kids, which original recipe containts Petit Beurre cookies, butter and melted chocolate, rolled into white sugar. I have always loved them!
So, here it is...my raw, vegan version of them, but they definitely very close to the original taste, so delicious! As I already mentioned many many many times, it must be a rare occasion when our treat is bad when added a bit of rum in it!
You can roll these bites into shredded coconut, cocoa or carob powder or fine Muscovado/coconut raw can sugar. It is not forbidden of course to drop them in some melted hot chocolate as well. Honestly though, I prefer them plain as they are, with no additions at all.

Ingredients for the bites
- 130 g raw cashews
- 120 g walnuts
- 4-5 Medjool dates, about 60 g
- 50 g dried plums
- 15 g raw cocoa powder
- 20 g cocoa butter
- 5 tsp rum
Decoration
- shredded coconut
- raw cocoa powder
- carob powder
- cocoa nibs
- fine Muscovado sugar
Blend the walnuts and cashews in a food processor. I use the Magimix food processor.
Stir in the plums and Medjool dates, cleaned and chopped, then blend again.
Melt the cocoa butter over low heat and stir it into the nut mixture with the cocoa powder.
Blend one more time before pouring in the rum then do it one more time.
Shape small bites with your hands and roll them into some of the additions I mentioned above, or serve them plain like that.
Store in a closed air-tight container in the fridge because they are probably more tasty when served cold, but they can also stay on room temperature for a while if you plan to eat them during the day.
