Iva, who has a master in Nutritionism, aka Healthy Little Tooth came to visit me this Sunday and brougha beautiful chia jam to sweeten the day!
CHIA BLACKBERRY JAM
Ingredients
- 2 cups (1 cup=250 ml) fresh or frozen blackberries
- 2 tbsp chia seeds
- 4 tbsp coconut sugar/honey/date syrup
- half of freshly squeezed lemon juice
- half tsp of spice by choice (cinnamon)
Blend the chia seeds to powder. You don't have to blend them, but if you don't the jam will be slimy.
Heat the blackberries over low heat and add the sweetener of your choice. Continue stiring for about 10 minutes until it's all well incorporated.
If you don't want big chunks of fruit, feel free to blend it with a hand mixture. Wait a little bit for the mixture to cool, then stir in the lemon juice and spices and taste it to see how to adjust the sweetness or sourness.
Lastly, add the chia seeds, stir and store in jars. Once the jam is completely cool, store in fridge where it will harden as well and you will be able to enjoy it for at least a week.
Keep in mind to wait the jam to cool before adding lemon, cinnamon and chia seeds into a warm mixture because you might lose some valuable properties of the ingredients.
