Delicious moist and soft banana bread full of flavour for breakfast- yes, please!

Ingredients
- 2 eggs
- 2-3 tbsp ml maple syrup
- 85 g extra virgin coconut oil
- 65 g coconut palm sugar
- 3 medium sized ripe bananas, about 320 g peeled bananas
- 115 g spelt flour
- 100 g wholegrain oat flour
- 1/2 tsp cinnamon
- pinch of Himalayan salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- a handful of dark chocolate chunks (devide a bit for decoration)
- a handful of coarsley chopped walnuts
Peel the bananas and mash them on a plate using a fork. Sprinkle the cinnamon all over them.
Beat the coconut oil, softened, with the sugar and maple syrup then stir in the eggs.
In a different bowl sift the flours, salt, baking powder and soda.
Combine the dry ingredients with the wet using a mixer.
You shouldn't mix a long time, just as long as it takes you to combine the ingredients well.
Chop the dark chocolate and the walnuts into small chunks.
Use more than a half of the chocolate to fold into the mixture and use the rest to sprinkle on top of the bread for decoration.
Use the roughly chopped walnuts completely for the mixture, not for decoration.
Once you're done, pour the mixture in a bread loaf mold lined with parchment paper and sprinkle the chocolate on top.
Bake on 180C degrees for about 50 minutes. The batter shouldn't be sticky from the inside.
Once it's baked, leave it in the mold for 10-15 minutes at least, then take it out and take off the parchement paper as well.
Leave it to cool on a wire rack.
