Baked apples with almond and coconut stuffing

A light dessert that melts into your mouth while warm & allures you with its looks.

This was my first attempt to make baked apples and it resulted in these beautiful shoots that you can see below & I can say I was quite satisfied with the taste, texture and looks of my special treat.

The almond-coconut filling will melt with the apple and form a trully rich taste, while the goji and aronia berries & coconut flakes will make the dessert more beautiful and add an additional healthy kick, to an already healthy dessert.

Apples & stuffing

  • 2 middle sized apples (Yonagold, Idared...)*
  • 60 g almonds, blend to flour
  • 15 g fine coconut flour
  • 15 g coconut sugar
  • cinnamon
  • vanillla bourbon, optional
  • ghee butter

* Choose sweeter types of apple, avoid sour.

Sprinkles

  • goji berries
  • aronia berries
  • coconut flakes

Wash the apples and scoop out the hard middle part and the apple pits. I used a small utensil that is cut out just for that, because it you use just a spoon it will make your life much much harder.

Simply, push the little utensil into the middle of the apple, from the top to the bottom and pull out the entire inside of the apple, then spoon a little bit more the top and the middle part of its inside.

In a different bowl, stir the coconut and almond flour, the coconut sugar, cinnamon and bourbon vanilla powder, if you decide to use it.

Fill the apples halfway, place a small piece of butter on top, then fill the apples to the top.

Place another two small thin cubes of butter on top and place in the oven to bake.

 

Bake the apples on a 190 C degrees in a ceramic/glass dish that you've previously coated with butter, for about 30 minutes, or until the apples soften.

Keep in mind not to over bake the apples.

 

Serve with some goji & aronia berries and some coconut flakes.
