Rum muffins with jam

An irresistable combination of lemon, rum, vanilla and coconut oil make this muffins soft and tasty.

Ingredients

  •  3 eggs
  •  60 ml agave syrup
  • 1 vanilla pod seeds or 10 g vanilla sugar 
  •  a little bit of lemon zest
  •  2 tbsp rum 
  •  130 ml extra virgin coconut oil
  •  110 g spelt flour
  •  1 tsp baking powder
  •  plum, cherry or strawberry jam

In a large bowl mix the eggs, vanilla and agave syrup.

Add the melted and slightly cooled coconut oil, rum and lemon zest.

Lastly, mix in the flour and baking powder.

Pour the mixture in the muffin tins lined with parchment paper, a little bit over the half.

In each muffin drop a nice tsp of jam.

Bake on 190C degrees for about 25 minutes or until done.

Make sure the toothpick doesn't stick when you make the test.

Let them cool for a while on a wire rack and then dig in! :)
