Basic granola with orange juice

Basic granola enriched with some freshly squeezed orange juice.

Ingredients

  • 200 g fine oat flakes
  • 150 g mixed almonds and hazelnuts
  • 50 g raw peanuts
  • 50 g pepitas
  • 35 g shredded coconut
  • 75 ml agave syrup
  • 75 ml extra virgin coconut oil
  • 75 ml orange juice
  • cinnamon
  • goji berries or other dried fruit

Coursley chop the peanuts and nuts then stir all dry ingredients in one large bowl, exept for the goji berries.

Stir the wet ingredients in a different bowl. You might need to melt over low heat the coconut oil if in solid state before using it.

Add the wet ingredients to the dry ones and sprinke some cinnamon all over it. Combine all ingredients nicely.

 

On a large baking tray lined with parchement paper roll the "granola to be" and bake on 160 C degrees for about 30 minutes.

You will have to stir the granola every 10 minutes so it bakes evenly.

Once baked, take it out of the oven, transfer on a cool surface with the parchement paper and leave it to cool and set. At this point add the goji berries or some other dried fruit and that's it!

Store in a air tight container!
