Seasoned baked sweet potato

Slices of perfectly baked, soft sweet potato as a side dish or a great spread.

Baked sweet potato has a slightly sweet flavour as you can imagine and combines perfectly with savory dishes and even some stronger spices, but also the feta cheese/sweet potato combo is a winner for me!

There is a special bond between me and the feta cheese, perhaps because that's just how we do it in Bulgaria. :D

This recipe can serve you as a side dish or even a spread bacause the sweet potato will soften a lot during baking so you will actually be able to spread it on a piece of bread, sprinkle some feta cheese on top along with some pumpkin seeds maybe and basil leaves  if you omit the parsley -  deeeeelicious!

Ingredients

  • 1-2 sweet potatoes or more
  • extra virgin olive oil
  • 1-2 cloves garlic or by choice
  • fresh parsley, amount by your choice
  • Himalayan sal, pepper, cayenne pepper...
  • Parmiggiano- optional

Wash the sweet potatoes and slice them. They can be thick as your fingers or a bit more.

You can leave the sweet potato skin, especially if you'll be serving the slices as a side dish or you can peel it off if you just want to spread it on bread.

Bake the sweet potato slice on 180 C for about 20 minutes on one side and then flip them over on the other side for another 20 minutes or so. 

Take them out of the oven after these 40-45 minutes, fork them and pour the olive oil, parsley and garlic mixture all over them. Season the slices.

You can immediately even sprinkle some Parmiggiano over the top, or do that after they're completely baked, just before serving.

Baked the sweet potato slice for another 5 minutes or a little bit more.
