Vegan tahini cookies

Tahini lovers, this recipe is for us!

It's no secret, I adore tahini as an addition to my smoothies, in cookies, cakes, raw treats, with addition of honey or simply on a spoon.:D

The recipe is super quick and easy to make, the cookies are slightly gooey inside and have a beautiful crust on the outside, so I believe they'll be a great addition to your coffee.

  • 115 g tahini paste, the recipe for the homemade version is on the blog, if not Biona's perfect!!
  • 100 g coconut palm sugar
  • 50 g extra virgin coconut oil
  • 1 chia egg
  • a pinch Himalayan salt
  • 60 g spelt flour
  • 40 g wholegrain spelt flour
  • 1 tsp baking soda

Dark chocolate chunks to be pressed onto the cookies before baking.

Mix the tahini paste with coconut palm sugar and coconut oil until a creamy texture.

Stir in the chia egg and a pinch of salt, then add the flours as well, mixed with baking soda.

Mix for the last time shortly until all ingredients are well incorporated.

Use your hands to form small balls of dough, place them on a baking tray lined with parchment paper and gently press the top of the cookie dough placing a few drops of chocolate on top.

 

Bake the cookies for about 10 minutes on 180oC.

Once the cookies are baked, take them out of the oven but leave them on the baking tray for a little while because they'll be quite fragile, then transfer on a  wire rack for cooling.
